So this week I start my volunteering with the Tarrant Area Food Bank in the Cooking Matters Program. This is a program designed for people who are trying to eat healthier and make their grocery budget go the farthest. It is designed to focus on the My Plate Standards which is a good start for anyone who is eating SAD (Standard American Diet ). It is also shows people how to actually cook foods that they would not normal use as well as how to read labels and what good nutrition looks like.
I was shocked by the statistics I heard in the Training class. Here in the DFW area 1 in 4 children are food insecure. We also have one of the worst rates for child obesity. The two sound like two different problems, but the truth is they are interconnected. White Flour, High Calorie, White Sugar, and Nutrient Poor food is CHEAP. Think about it you can get 14 Burgers at McDonald's for $15.00 and you'll feel full ,but you don't have any of the vitamins or nutrients that you need for proper health.
So wish me luck in my new endeavor. If I can help just one person it will be a success.

Your Mission if you chose...
So today, let's lay out the ground work/mission. I am 39 year old father of two with a beutiful wife and partner whom I met at culinary school. I have lived all over this country and one thing stands out we are alot more chubby than we used to be.
For the last 30 years or so our total focus is how to make (our not make) food faster, cheaper, and "taste better". As a member of the Food Industry, which has grown in leaps and bounds during this time, I have enjoyed some of the benefits of this trend (mostly a steady paycheck) and have contributed to it. So, I know it seems kind of hypocritical to say what I am about to.
If we are going to save the next generation we need to rethink what it means to eat.
I am a christain in faith and god is starting to open my eyes to what he wants for us. Heart disease, Child Obesity, Food Allergies, and alike are not what he promised us when he said we would have the abuntant life through him.
My mission is to meet you where you are and bring you along to a healthier relationship with your food. Just as Jesus did he met people who were lost in life and brought them to know the truth. It is my prayer that you will join me on this journey.

Welcome
For those just stumbling upon this blog, I welcome you. We are starting our mission. So I hope you will join me in this adventure.
Thank you to those who have come before and raised the awareness of child hunger, poor nutrition and our greatest challenge of the 21 century. This blog is to further educate, discuss, and assist those who are looking for a holistic approach to eating. May our passage through the city bring more disciples.
